Manchester's only brewery given over entirely to mixed fermentation. Everything here spends months in barrels and foeders before it gets anywhere near a glass, so expect wild ales, saisons and blends rather than a hazy pale. Thirds are the sensible measure.

It's a small taproom in the Piccadilly arches, open at weekends, and the staff will happily talk you through what's in the wood. Bottles to take home.
